Zambia’s Northern Province is home to the country’s highlands, where ancient volcanic soils and the unique honey processing of the beans help produce the superb flavor profile of this AAA graded coffee from Mafinga Hills. Honey processing removes the skin and pulp but keeps the mucilage intact before the drying phase to render an unusually sweet cup profile. Honey processed coffees can range from yellow to black, depending on how much mucilage is left on the bean, the length of drying time, and its exposure to sunlight. We chose a medium roast for even more intense sweet and savory flavors like chocolate and caramel with notes of ripe blackberry, cherry, and brown sugar. Delicious!
