Located high in the fog-shrouded volcanic hillsides of the Nyabihu District, Shyira is focused on producing top-quality small-lot coffee. Local farmers bring their hand-picked cherries for a 12-hour fermentation before being washed and sun-dried. During the process, local farmers perform “ikinimba,” which consists of singing 5 songs while dancing & stomping on the coffee to clean off the last of the mucilage, yielding a beautifully sweeter cup.
